Strawberry Basil Smash Cake

Ingredients: – 1 cup all-purpose flour – 1 tsp baking powder – 1/4 tsp salt – 2 large egg – 1/3 cup honey or maple syrup – 1/2 cup Greek yogurt – 1 tsp vanilla extract – 1 cup fresh strawberries, diced – Fresh basil leaves, chopped

Instructions:

Preheat oven to 175°C (350°F). Grease and flour a small cake pan, then set aside for the strawberry basil batter. 

Whisk flour, baking powder, and salt in a bowl. In another bowl, mix eggs, honey, yogurt, and vanilla until smooth and creamy. 

Slowly combine dry ingredients with the wet mixture. Fold in diced strawberries and chopped basil, stirring gently to avoid overmixing. 

Pour batter into the prepared pan and smooth the top. Bake for 25-30 minutes until a toothpick comes out clean from the center. 

Cool the cake completely before topping. Use whipped cream or Greek yogurt as frosting for a light, baby-friendly finish.
